Ingredients

  • ½ lb shrimp, cooked and deveined
  • 3 T butter
  • 3 T flour
  • ½ tsp dry mustard
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • ½ tsp rosemary
  • 1 cup milk
  • 5 egg whites
  • 4 egg yolks
  • 2 T lemon juice
  • Parm/Asagio mix, grated

  • Tip #1: Use room temperature eggs to ensure maximum fluffiness.
  • Tip #2: Measure the ingredients before you start! Soooo important!

Directions

Heat oven to 375°F. Chop shrimp. On the stove, melt butter in a medium saucepan. Sauté shallots and garlic to translucence. Add flour, mustard and rosemary. Cook 5 minutes, stirring constantly until thickened. Add milk; stir into a thick sauce. Let cool slightly while you beat the egg yolks, then beat into sauce. Add lemon juice. Butter two 14-ounce ramekins and sprinkle liberally with cheese mix. Beat egg whites in a glass bowl until stiff. (Note: This takes a looong time to do by hand!) Stir shrimp into rosemary-garlic sauce and fold in the egg whites with just a few strokes. No overmixing. (Seriously. You can ruin the whole thing in this step. Don’t.) Pour soufflé batter into the prepared ramekins. Reduce heat to 350°F when putting into the oven. Bake for 27-29 minutes until puffed-up and browned. (Note: If using a soufflé dish instead of ramekins, bake for 35 minutes.) Serve immediately with crisp-tender asparagus spears and gelato for dessert.
